Chardonnay |

Pale gold with a tinge of green. White peach bouquet with flavours
of peach and honey dew melon, combined with soft butter and citrus.
Fermented in French oak, good drinking now and will improve in the
bottle over the next 5 years. Bottled in the screw cap to ensure sound
drinking. |

Macedon |

Left in the bottle for a minimum of 4 years, developing the delicate
flavours and fine bead. The wine is then disgorged and topped up with
a little of the previous years wine liquer. The resulting sparkling
Macedon is pale straw in colour, pouring with a soft, creamy mousse
and just a touch of yeast. An aperetif style, very dry and delicate. |

Pinot Noir/Chardonnay Sparkling |
12.5% Alc/Vol |
Pale straw colour, with a fresh strawberry bouquet. Pouring with a
fine bead, the Chardonnay is dominant on the initial and final palates,
with the Pinot Noir filling out the middle.
A dry, aperetif style sparkling, with delicate pear and strawberry
flavours. |

Pale straw colour, with a touch of pink. A blend of Chardonnay and
Pinot Noir, with strawberry and citrus flavours. This very reasonably
priced bubbly is bottle fermented, with a minimum of 12 months on
lees and comes packaged in a crown seal bottle. |

Pinot Noir |

Following fermentation in open vats, the Pinot is pressed out into French
barriques, remaining for the next 18 months. Deep red in colour, with the
perfume of sweet Pinot Noir fruit. Plum and cassis, with a touch of earthiness
on the palate. This wine should mature well over the next 5 years and being
bottled under the screw cap, will ensure sound drinking. |

Cabernets |

| |
Bright cherry red in colour with a raspberry bouquet. This wine is a blend
of 60% Cabernet Franc and 40% Cabernet Sauvignon, possessing soft tannins
and a spiciness that lends it to being well suited with pasta and Italian
style dishes. Bottle aging will see this wine soften and develop more of
the cedar aromas of these Cabernet blends. |

Comprised of aged Shiraz, Pinot Noir,
Cabernet Franc and Cabernet Sauvignon. This sixth release has been dosaged
with a small amount of Rutherglen port, lending a slight richness and softness
to the middle palate. The emphasis of the Louise Clare is on complexity
of flavour and the quality of the aged base wines blended together and having
spent two years on yeast lees, results in a beautifully balanced sparkling
red. |
